Our Pizzas

We set out to cook the best pizzas we could, using the best ingredients we were able to source, locally if possible but selected on quality.
The only thing that makes good food more enjoyable is sharing the experience in the company of friends and family. This passion has led to the journey of creating Pizza-Ria and the most delicious pizza.

The Oven

Our beloved wood-fired oven is a top of the range Bushman which we purchased back in 2016 from Jay Emery at Bushman Ovens. Prior to this, we were working with a Dragon oven for 4 years which served us well but we realised we needed to upgrade after getting busier and busier.

With our Bushman we can generate a heat in excess of 350 degrees centigrade which cooks pizzas in around 45 seconds - making it ideal to cater for a variety of events. We are able to cater groups of 50-200 guests

Our wood fuel is il Faggetto. These are super-compressed 100% pure beech briquettes which have been certified free from chemicals, preservatives or binders and we have found this to be the perfect food grade wood fuel that we use both at home and commercially.

 

 

The ingredients

Flour

We make our own dough with Polselli 00 flour and slowly cold ferment it in the fridge which develops the flavour and makes it more easily digestible.

Dough

We only use our own homemade dough to guarantee consistency and quality using only four ingredients; flour, water, salt and yeast, this gives a lovely soft flavourful pizza base which is complimented with the best toppings that we can source.

Our dough is suitable for vegetarians and vegans

We can also cater for gluten free.

Tomato Sauce

We use Strianese Gold Tin tomatoes. These are premium tomatoes from the San Marzano area of Naples which ensures full flavour. All we do is blend them with a little, quality sea salt and they are good to go.

Cheese

Our Parmesan is called Gran Soresina, a grated Grana Padano. This fine grain cheese is matured for at least 9 months. It’s one of the world’s first hard cheeses, created nearly 900 years ago.

Our mozzarella is a Fior di Latte, a shredded cow’s milk cheese which we use for it’s melting and stretching qualities.

Meats

We use a variety of different charcuterie meats such as Pepperoni, Parma Ham and Chorizo. Our most popular meat is the shredded ham hock which is Welsh cured hock that we cook for 24 hours and hand shred.

Seafood

While not part of our usual events offering, we can provide a range of sea food to add to your pizza such as Tuna, Anchovies, Smoked Salmon and Caviar. This can be provided on special request.

Fruit and Vegetables

We have a variety of extra toppings which are available. We use fresh Chestnut Mushrooms, Rocket, Basil and Red Onions. We also provide Pineapple, Olives, Jalapeños, Roasted Red Peppers and Sweetcorn.

Food Hygiene Rating

We are proud of the fact that we have maintained a 5 Star Hygiene Rating since we began back in 2016. We are also members of The National Caterers Association meaning all our documentation is not only up to date but easily accessible when copies are required by venues hosting events. We are fully insured and all our equipment is Pat. Tested regularly.
